Za’atar Marinade

Eat Wisconsin Fish / Za’atar Marinade

A Midwest fish meets the Middle East!

Ingredients:

  • 1 lb. raw Wisconsin fish
  • 2 tablespoons za’atar seasoning (a combination of dried oregano, thyme, and/or marjoram with sumac and toasted sesame seeds)
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon minced garlic
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

 

Method:

Mix together the za’atar, lemon juice, lemon zest, minced garlic, salt, and pepper, until uniform. Spread over or mix with raw fish. Let sit for 15 minutes covered. Grill as kabobs or bake as fillets.

 

Grilling: preheat the grill and keep it hot. Kabobs take about 3 minutes per side to cook.

Baking: cooking time depends on fillet thickness. An average 8-oz fillet cooks in 10-12 minutes in a 425 °F oven.
