4 Tbs of butter, more butter below! 1/3 cup minced crabmeat 1/3 cup small shrimp 1 or 2 garlic cloves, finely chopped 1 tsp Cajun seasoning, kick it up a notch!! 8 Ritz crackers, crushed 2 whitefish fillets 1 lemon

Directions:
Preheat oven to 375°F. Grease a 9×13 inch pan. Melt 3 Tbs of butter in a frying pan over medium heat. Add garlic and sauté for 1 minute. Stir in crabmeat, shrimp and cajun seasoning and cook 1 minute longer. Remove from heat and stir in crushed crackers. Spread mixture over fillets and sprinkle with lemon juice. Roll up fillets and fasten with toothpicks to keep stuffing in. Place in prepared baking dish. Dot each roll with butter and cover pan tightly with foil. Bake 25 minutes or until fish flakes easily with fork.
